The grifola (Grifola frondosa), in Japanese maitake which means “dancing mushroom”, is an edible mushroom widespread in the northern regions of Japan and eastern North America.
Maitake is also called King of Mushrooms due to the considerable size of the groupings it forms (up to 45 cm wide), it has been used as a remedy and food for over 3000 years.
Much appreciated for its versatility in both Chinese and Japanese cuisine, grifola contains glucans (β-1,3 and β-1,6) and polysaccharides with important health activities, of which the cell wall of the mushroom is rich.
Grifola is an excellent source of potassium, B vitamins (in particular niacin and riboflavin) and fiber, as well as trace minerals such as selenium and zinc.
The interest in the use of mushrooms is linked to the presence of high molecular weight polysaccharides, in particular β (1,3-1,6) -D-glucans.
