Fior di Loto wholemeal rye flour is an organic product coming exclusively from whole organic rye, grown in Italy. It is widely used in spiced breads from northern Europe. Rye bread keeps longer.
Fior di Loto wholemeal rye flour contains gluten, and therefore is not suitable for celiacs.
Fior di Loto wholemeal rye flour contains gluten with a low baking aptitude, a high content of mineral salts and the most contained vitamins are: PP, E, B5, B1, B6. It is perfect for the preparation of dark bread and traditional products. If used alone, it is not very suitable for the production of leavened foods, but if it is mixed with white flour it gives the bread a certain acid taste and makes the dough a little more elastic. Wholemeal rye flour is usually "mixed" with other flours to improve the dough and leavening characteristics.
