It is the main ingredient of traditional recipes such as pizzoccheri and polenta taragna, but we also find it in other traditional cuisines, such as the Russian one where it is used for the preparation of small focaccias called blinis. For the preparation of bread or desserts, it can be used alone, but it is better to add other flours as it has very long leavening times.
